Description
Something a little bit different that even the kids may like! Try adding different fruits and nuts for a variation. Great for a group breakfast.

Directions
Combine oats, brown sugar, baking powder and salt. Whisk together the eggs, milk, oil and vanilla. Add wet ingredients to oat mixture and stir till blended. Let stand for 5 minutes. Stir in fruit and sprinkle with walnuts. Pour into a 1 1/2-quart sized baking dish. Bake at 350 degrees for 35-40 minutes. Serve with additional milk if desired. Makes 8-10 servings.

Ingredients
v 3 cups whole grain oatmeal, not instant
v 1/2 cup brown sugar
v 2 tsp. baking powder
v 1/2 tsp. salt
v 2 egg whites
v 1 whole egg
v 1 1/4 cups milk
v 1/4 cup canola oil
v 1 tsp. vanilla
v 1 can (15 oz.) chopped and drained peaches
v 1 cup blueberries or blackberries
v 1/3 cup coarsely chopped walnuts
