Why haven't I tried making an angel food cake before this??? Easy recipe...sweet results!

Directions
Place egg whites in a large bowl and let stand at room temperature for at least 30 minutes. Sift 1/2 cup of the sugar and the flour together twice, set aside.

Place oven rack in the lowest position. Preheat oven to 350 degrees.

Add cream of tartar, extracts and salt to the egg whites and beat on medium speed until soft peaks form. Gradually add the remaining sugar, about 2 tablespoons at a time, beating on high speed until stiff peaks form. Gradually fold in the flour mixture, about 1/2 cup at a time.

Gently spoon batter into an uncreased 10-inch tube pan. Cut through the batter with a knife to remove large air pockets. Bake until lightly browned and entire top appears dry, about 35-45 minutes. Immediately invert pan and cool completely, about 1 hour.

Run a knife around the side and center type of the pan and remove cake to a serving plate. About 12-16 servings.

v 1 1/4 tsp. cream of tartar
v 1 tsp. vanilla
v 1/4 tsp. almond extract
